5 ways to eat eggs on whole 30

My journey on Whole 30 has ended, can you believe it? With all my nervousness about giving up some of my favorite things (aka wine and bubble gum), it was actually a pretty incredible month. I loved the way it challenged me to think about the things I put in my body, and it challenged me to get creative and playful in the kitchen. I think that starting your day well is such a gift to give yourself, and during Whole 30, I loved coming up with breakkies that were full of flavor and more than just your standard fried egg. So today I’m sharing my 5 favorite ways to eat eggs during your Whole 30 journey. And if you’re beginning the process- these dishes are great anytime of the day, not just breakfast!

Baked Sweet Potato with Fried Egg and Coconut Pesto

Baked Sweet Potato with Fried Egg and Coconut Pesto:

Bake a sweet potato for 1 hour at 375 degrees. Top with a fried egg and coconut pesto (1/2 cup coconut butter, 1/4 cup olive oil, 1/4 water, 1 large handful basil, 2 tablespoons pine nuts, sea salt: all in a blender until smooth!)

Kale & Skillet Eggs:

Sauté kale, brussels, and any other greens with oil of choice in a skillet on high heat. Crack two eggs on top, cover with a lid, turn your heat to low, and cook until your eggs are set. Serve with avocado, a side of sweet potato fries, and a Whole 30 approved hot sauce.

Sweet Potato Hash with a Fried Egg:

This is one of my favorites! And so easy. Use leftover cooked sweet potato (mine was baked) and smash it up. Fry it in a bit of coconut oil in a frying pan until it begins to brown a bit. In a separate pan, fry an egg. Serve on top of the sweet potato hash with sliced avocado and homemade mayo. And always salt and pepper.

 

Poached Egg with Smoked Salmon and Asparagus
Poached Egg with Smoked Salmon and Asparagus:

On a bed of spinach and chopped tomatoes, add a layer of smoked salmon. Then, top with sautéed asparagus and one poached egg. Need instructions on how to poach? You can find full instructions on my post about a Poached Egg Breakkie!

 

Soft Boiled Eggs on Greens
Soft Boiled Eggs on Greens:

This one is great you guys. Saute a bunch of green in your oil of choice with salt and pepper. I used kale, mustard greens, and swiss chard. I also threw in some leftover sweet potato wedges. While the mixture is sautéing, soft boil two eggs (boil for 4 minutes, then carefully remove from their shells). Place the eggs on the sauté mixture and serve with a condiment of choice! I used homemade mayo.
