avocado toast with a crunch

Happy New Year friends! I could not be more excited about 2017- there seems to be so much anticipation around the beginning of a year. It’s a time to reevaluate what you hope for, what you are working towards, and set intentions that can narrate the rest of your year. I love choosing a word each year to give voice to what I’m hoping to set in motion. This year, I chose the word commit,¬†with the intention to commit to presence, to the people around me, and to the things I’m working towards. In this season of focus, I also love to take on mindful practices towards health and wellness, committing to a life of healthy indulgence and balance. Enter one of my favorites- avocado toast.

Breakfast for me is like the “new years” of every day. It’s a time where I can choose each morning to be mindful. It’s a time to nourish, fuel, and energize my body in a way that creates sustainability and life. Life can be chaotic, and there never seems to be enough time in a day, so I love coming up with quick go-to recipes that are easy, full of the good things my body needs to operate well, and that just taste amazing. Avocado toast is one of those easy throw together breakfasts (or any meal really) that is full of healthy fats, nutrients, and is so versatile. And, avocado is one of those foods that is delicate enough in taste that it can take on some pretty dramatic flavor combos.

Some of my favorite combos:

Avocado, hummus + a poached egg.
Avocado, smashed peas + burrata
Avocado, pomegranate seeds + goat cheese.

You can get creative and use things that are in your kitchen to come up with a toast that is satisfying, beautiful and really darn good. To start off the new year, I made an avocado, sunflower seed, and pistachio toast with lemon and hot sauce. I love using leftover bread that is a bit stale, toasting it with some nice olive oil, then smashing it full of avocado and toppings. It’s one more way to think outside the box with food while still ensuring you’re getting all the delicious things to start your day well.
