banana blackberry toast

I’ve got a spin on the classic banana and peanut butter toast for you guys today! We all know that slathering a slice of bread with a nut butter and topping it with sliced bananas is one of the OG snacks, and for good reason.

Nut butter and banana toast is creamy and delicious and filling, and packed with all the good stuff to get you started for the day or to tide you over between meals. No wonder it’s reached for so often!

My spin on it is ever so slight- just a few additions that really take this toast up a notch to enhance its flavors. The additions? Blackberries, chia seeds, and honey! I know, I know, nothing revolutionary but trust me, these little inclusions make all the difference.

The sweet creaminess of the banana slices offsets the tart and more textured blackberry so well. We usually don’t think to combine fruits together for a dish unless we’re making fruit salad, but lately I’ve been playing with combining two or three different fruits for various dishes, with some fun results! Then I thought to stir some chia seeds into my almond butter. This changes the texture of the nut butter in the best way and packs another healthy punch. Oh and lastly, I drizzle my finished product with honey, because why not? Always sweetness, always honey.

So no, my spin isn’t anything crazy but ups the ante just enough to get you out of the usual recipe and into something a little more creative. Give it a try! Or even better, try a new fruit combination and nut butter mix-in of your own and see what happens.

Banana Blackberry Toast

4 slices bread of your choice (I love picking out a hearty, seeded loaf from my local bakery)
4 heaping tablespoons almond butter or nut butter of your choice
1 tablespoon chia seeds
1 banana, sliced
1/2 cup blackberries, sliced
2 tablespoons honey

Combine your chia seeds and nut butter and mix well. You know how the rest goes: Toast your bread slices and slather each with 1 heaping tablespoon (or more to your taste) of your nut butter/chia mix. Top that with banana and blackberry slices to your liking, then drizzle the finished product with honey! Dig in!
