turmeric + apple + carrot soup

Turmeric! It’s the main spice in curries, and is arguably the most powerful herb for your body. In fact, turmeric has been found to have benefits that are equivalent to many pharmaceutical drugs. It’s a miracle worker, and so delicious to cook with. It’s anti-inflammatory, increases antioxidant capacity¬†in the body, is linked to brain function, rumored to lower the risk of brain cancer, and is known to help prevent some cancers. Magical right?!

One of my favorite things to make during a busy week is a pot of soup. That way, when I get home from a long day, I’ve got a vat of deliciousness waiting for me. Along with a slice of crusty bread or a salad, this turmeric + apple + carrot soup is the perfect one pot go-to dinner that also fuels your body with all the delightful perks of eating well.
