thrive algae oil and the ultimate sweet potatoes

You guys…I want to introduce you to one of my new favorite things. You know when you’re making sweet potato fries in the oven and you can’t get that perfect crisp? Or when you’re heating a pan and the oil you’re using gets so smokey? Enter Thrive– a culinary algae oil. This magic oil is light and neutral, and has a high cook point which means it’s able to cook your food at high high heat. Soggy sweet potatoes solved.

What you eat has such an impact on you. I recently discovered my love of Thrive as I began to dive into my journey of Whole 30. This entire journey¬†has been an incredible time of choosing mindfulness over the things I choose to ingest, it’s quite fascinating actually. When we become mindful in one area of life, it seems to have such an impact on other areas of our lives as well. With an awareness of how certain foods are affecting me, it’s been fascinating to observe myself become more aware of conversations I’m taking in, interactions I’m having, and the overall way I’m treating myself.

I think that while I’ve never been one to write off a certain food, and I really love a good indulgence, I’ve absolutely loved this process of choosing to treat my body well. In the process, I’ve gotten to discover some incredible products that are not only Whole 30 approved, but also downright good. Thrive algae oil is one I stumbled on early last year, and as I began to recipe create over these past 30 days, it became my go-to cooking oil.

With a name like algae oil, I had suspicions of Thrive tasting sea-like. But it’s quite the opposite- the oil is light and so neutral and is incredible for cooking. One tablespoon of this deliciousness packs as much monounsaturated fat as an avocado- and there is only 1/2 gram saturated fat per serving, which is pretty much unparalleled with any other oil. Plus- it’s so fun for making things crispy. Try using it to make plantain chips, fry an egg, or even in your baked goods.

This recipe has been one of my go-tos over the past few weeks, and since it’s been a staple, I had to share it with you.

Thrive Baked Sweet Potato Rounds with Coconut and Mint Dipping Sauce

1 large sweet potato, sliced thinly into rounds
1 tablespoon Thrive culinary algae oil
2 tsp sea salt
1 tsp ground pepper

Heat your oven to 425 degrees.
Line a baking sheet with tin foil or parchment paper.
In a large mixing bowl, drizzle your potatoes with your oil, salt and pepper.
Using your hands, coat the rounds evenly with the oil.
Place your potatoes flat on the baking sheet, and bake in the oven for about 12 minutes, or until they begin to soften. Pop on your broiler, and broil the rounds for 2-5 minutes or until golden and crisped!

Serve warm with your dipping sauce!

Mint Dipping Sauce:
1/2 cup coconut butter
1/4 cup Thrive algae oil
1/4 cup water
1 tsp sea salt
Small handful of mint leaves

In a food processor, combine your coconut butter, water, mint, and salt. Slowly drizzle in Thrive algae oil until completely combined.
