the whole 30 journey…it begins with a soft boiled egg and sweet potato medley

Yesterday, I made the leap you guys. I decided to jump, to go for it, and to actually commit to the Whole 30. I’ve done it once before, last April actually. It was such an incredible month of removing the grime from my body, of thinking clearly, and of consciously choosing health. This time around, I’m calling it the “dirty 30″…getting rid of all the dirt and taking on all the whole.

Truthfully, I’m not really a discipline person- I’m a celebrator who loves food and wine and all the whiskey. I love celebrating with friends, indulging in bread and butter, and ending everyday with something sweet. But, one of my highest values is holistic health, and with the strong belief that what we put in our bodies directly affects how we feel about ourselves, I’m taking the 30 day challenge.

This breakkie: spiralized and sautéed sweet potatoes, mustard greens, sautéed asparagus, soft boiled eggs, fresh basil, garlic, and sea salt.

Soft Boiled Egg and Sweet Potato Medley

1 sweet potato
2 eggs
1/2 cup mustard greens
Two cloves chopped garlic
1 tablespoon extra virgin olive oil
3-5 asparagus spears
2 basil leaves, chopped
Sea salt

Using a spiralizer, thinly spiralize your sweet potato. If you don’t have a spiralizer, thinly slice your sweet potato into strips or slices. In a frying pan, sauté the potato and asparagus for about 10 minutes on medium heat with a dash of olive oil.

In a small saucepan, sauté your garlic in olive oil until golden (about 5 minutes)

In a separate pan, boil a few cups of water so you can soft boil your eggs.
Once your water is boiling, put in your eggs and boil for 4 minutes. (if you prefer your yolks hard-boiled you can boil them for 7 minutes).
Remove the eggs from the water, and rinse in cold water. Crack gently and peel the eggs. If you’re having a hard time peeling them, you can peel off the top and use a spoon to remove the egg.

On a plate, assemble your medley!
Mustard greens.
Then the sweet potato and asparagus.
Top with eggs.
Then garlic, basil, and a dash of sea salt.

And eat whole 🙂
